"Irreversible" means that a change or reaction cannot be reversed. In general, the term is used in chemistry and physics to describe reactions that are not reversible, or to describe materials that permanently lose their original properties as a result of a change. An example of this is the irreversible polymerization of plastics, in which the linking of molecules cannot be reversed.
